چکیده
Trace elements are dangerous to human health and there is a rising concern about the quality of processed foods in some parts world, especially Iraq.
The chemical composition (total sold, moisture, ash) concentrations trace canned fish (Skipjack tuna, Sardines, Tuna fish, Mackerel) from Kalar market, Iraq were determined by using an inductively coupled plasma-optical emission spectrometer.
ranges obtained for mg/kg as follows: Se (0.025–0.77), As (0.02–1.07), B (0.05–0.7), Ag (0.04–0.83), Ba (0.05–0.975), Mg (29.8–37.5), Mn (0.97–2.09), Cu (0.91–3.09), Zn (5.12–11.7). studied fishes pose no risk with respect estimated daily intake Se, As, B, Ag, Ba, Mg, Mn, Cu, Zn. total target hazard quotients metals individual species (except Fme, Fma, Fsh) more than one, which was responsible noncarcinogenic risks. carcinogenic value arsenic also higher standard (10-4) set United States Environmental Protection Agency.
It revealed that consumption causes chronic cancer humans.
